I made this time a meatloaf for the husband that I’m sure he’ll love. Serve it with whole wheat pasta, brown rice or a nice salad.
Kibbeh (or quibe in Portuguese) is a Syrian dish that is very popular in Brazil. I believe it became so big back home because there is a large Lebanese and Syrian community in the country.
I LOVE kibbeh and the best part is that it’s a complete meal on its own, it has protein and complex carbs in it. The kibbeh I make is mainly made of beef and bulghur (cracked wheat). It can be fried or baked but since I avoid frying anything we eat I always bake it.
The cool thing about this dish is that it can be rolled into big balls, small balls (for appetizers) and also done in a pan and cut into squares after, sorta like a meatloaf.
Chili is a dish that I ate for the first time once I had already moved to Canada. I love it because you can add lots of veggies and it can be a very healthy option for a nice, filling meal.
