Tonight I wasn’t in the mood to spend hours in the kitchen so I prepared a light, healthy meal for me and my husband. I made a couple of chicken breasts with a side of salad and brown rice. Simple but very flavourful. The secret? Parsley.
This is an old recipe that I haven’t done in ages. This time I swapped the all purpose flour with whole wheat flour to make this healthier and lighter.
The filling can be changed with anything you’d like: turkey, roast beef, cheese, etc. A pancake with a side of salad might be just the perfect meal.
Everything in life requires balance. Eating well is necessary so we can function and feel well and lead productive days, without feeling overtired or any other symptom of a sedentary life.
We have to agree that life would be boring if we didn’t indulge and treat ourselves to a nice meal.
I’ve put together a daily menu where you can find a little bit of both. The weekend just started so you still have time to get the ball rolling.
I will offer you the option to indulge or eat healthy for breakfast, lunch and dinner but I would pick one meal to go all out. Just a suggestion…if you feel you deserve more, by all means, enjoy it!
This recipe is in honour of my friend Roberta, who always asks for something new to cook for her husband and kids. I also shared this recipe with a friend back home because her husband hates when she fries anything. I come from a close-knit family, which means I grew up surrounded by my uncles, aunts and cousins. I have wonderful memories of my family’s get-together. We used to wake up on sunny Sundays, stop by the bakery nearby our house to pick up freshly made bread and then go to my uncle’s cottage 40 minutes away from the city. We would spend our day swimming, eating and running around until we had to be convinced to go home to rest for the week that was about to start. When I remember those days I think that the recipe I am about to share with you would have been the ultimate hit.
