2I love coming up with light, healthy and easy to make recipes. I look at the ingredients I have at home and experiment with them.

I made this time a meatloaf for the husband that I’m sure he’ll love. Serve it with whole wheat pasta, brown rice or a nice salad.

Ingredients for the meatloaf

  • 1,5 kg of extra lean ground beef
  • 5 table spoons of skim milk
  • 3 slices of whole wheat bread without the crust
  • 4 teaspoons of salt
  • 1 teaspoon of black pepper
  • 2 teaspoons of chopped garlic
  • 1/2 onion,  finely chopped
  • 1 teaspoon of Mrs. Dash Garlic and Herb seasoning
  • 1/2 cup of chopped fresh parsley
  • 1 table spoon of light parmesan cheese

Ingredients for the filling

  • 1 table spoon of light cream cheese
  • 1 table spoon of light ricotta
  • 5 table spoons of shredded light mozzarella
  • 1/4 cup of chopped fresh parsley

Directions for the filling

Mix the cream cheese, ricotta and parsley in a small bowl and set aside. Don’t add the mozzarella yet.

Directions for the meatloaf

  • preheat oven to 400 F
  • break the bread into small pieces and add it to a large bowl
  • add the milk and mix well
  • once the bread is soaked on the milk, bring in the ground beef and the rest of the meatloaf ingredients described above and mix very well with your hands for several minutes
  • the meatloaf is now ready to be assembled. Open a large piece of tin foil and open and spread the meat evenly on top of it
  • spread the filling on top of it and lastly, sprinkle the mozzarella on it
  • in order to close the meatloaf, grab one of the edges of the tin foil and start rolling it (see picture below). Once completely rolled, close the edges
  • put in the oven for 1 hour. Leave it covered with the tin foil for the first 40 minutes and then remove it so the meatloaf gets darker on top and on the sides
